Culinary medicine pairs the art of cooking with the evidence-based science of medicine to empower people to make nourishing, affordable, and delicious decisions about what to eat.

Following the “food as medicine” philosophy, the Culinary Medicine Program at RedBird expands UT Southwestern’s efforts to achieve our vision of:

  • Making delicious, nutritious food accessible to everyone
  • Preventing and treating chronic disease
  • Promoting the wellness of our community

Our Services

We offer three paths for patients to connect with the Culinary Medicine team:

  • E-consult (UTSW internal referrals only)
    • E-consults provide brief, targeted, food-based input to patients’ questions and concerns, supporting their health management in an innovative way.
    • E-consults are clinician-to-clinician collaborations within the electronic medical record. Patients are encouraged to ask their UTSW team for a consult to get written advice about how food can support their health goals.
  • One-to-one combined physician and dietitian consult (culinary medicine consult – 90-minute appointment)
    • These visits include personalized health history and nutrition connection, coaching for nutritional lifestyle change with goal setting, and food/recipe guidance.
  • Group (or shared) medical appointment (coming in late 2023)
    • Build community, culinary skills, and practical strategies for health improvement in a kitchen instead of an exam room!
    • Culinary medicine group medical appointments will highlight the practical aspects of culinary medicine through an educational, hands-on cooking class.

Meet Our Team

Jaclyn Albin, M.D., DipABLM, CCMS

Dr. Albin launched UT Southwestern’s Culinary Medicine Program and serves as its Director. She is an Associate Professor of Internal Medicine and Pediatrics and is board certified in lifestyle medicine and a certified culinary medicine specialist (CCMS). Dr. Albin seeks to integrate the clinical, educational, research, and public health aspects of food as medicine through the training of future health care professionals, delivery of innovative patient support in lifestyle behavior change, and high-quality research that uplifts the health of communities.

Milette Siler, M.B.A.-HC, RD, LD, CCMS

Ms. Siler is a culinary dietitian nutritionist who has been “serving up” culinary medicine in the teaching kitchens of UT Southwestern since 2014. In addition to her outpatient care career providing hands-on culinary education for cancer survivors, she serves as the Lead Dietetic Instructor for UT Southwestern Medical School, bringing enhanced nutrition education to medical students, residents, and other health professionals.

Appointment Information

You must be an established patient with a UT Southwestern provider (having been seen within the past three years) to make an appointment.

How to Prepare for an Appointment

On the day of the appointment, please arrive 30 minutes early to allow time for parking and registration. We will do our best to see you at your scheduled appointment time.

  • Bring a complete list of medications, supplements, and vitamins.
  • Consider having your key questions (including health and wellness goals) prepared in advance for your appointment.
  • If you are experiencing specific food-related symptoms and/or food concerns, please bring a log of these items.

In addition, please bring your:

  • Current insurance card
  • Driver’s license or other approved government picture ID
  • Method of payment – credit or debit card only
  • Relevant past medical records, if available
  • Completed paperwork, if you received forms before the visit

To facilitate ongoing communication, we recommend patients enroll in MyChart, which allows patients to communicate directly with UTSW providers, update contact information, complete visit questionnaires, and request clinic appointments. Sign in or sign up for MyChart.

Canceling an Appointment

If you need to cancel an appointment, please call the clinic or cancel via MyChart 24 to 48 hours in advance so we can accommodate other patients who might be waiting for an appointment.
